Seaweed rock melon salad
I got the opportunity to get this really sweet small rock melon from AEON Big, which many times i tried, they can be quite hard or overly crunchy to bite for the little one. Oppositely, for this time, it is really soft and sweet - almost similar texture to honey dew except it is firmer.
I have some untouched leftover silken tofu (rinsed with water previously) and wakame (presoaked previously) in fridge, thus i actually tried using it to make into a cold exotic salad.

Recipe:
1/2 cup oat (soaked overnight)
2 Tbsp organic cold wakame
5 cube organic cold silken tofu
1/2 cup diced rock melon
2 Tbsp greek yoghurt
Combine everything in a bowl and serve immediately. It tastes like a japanese salad due to wakame, with some sweet taste comes from the rock melon.
