Dinner Dishes

Recipe:
-stir-fry prawn with ginger and spring onion
-stir-fry assorted vegetables with basil leaves
-tofu with fried minced chicken and shallots
-black bean chicken feet soup
Stir-fry prawn with ginger and spring onion -
1 bowl medium size prawn
2 cloves garlic (minced)
1 knob ginger (cut into strips)
2 stalks spring onion
2 Tbsp pineapple puree
2 Tbsp soup stock (i use black bean soup -in the picture)
some fresh lemon thyme
(1) Prepare prawn by soaking prawn with some water and 1/2 Tbsp apple cider vinegar. Drain off water, and marinate with 1 Tbsp sesame oil and pineapple puree for 30 minutes.
(2) Heat up cooking pan with some coconut oil. Add in garlic and saute till fragrant. Add in ginger and saute till lightly brown.
(3) Add in prawn and stir fry a short while. Once it turns slightly orange in colour, add in spring onion and soup stock and put to low temperature. Put on the lid and simmer for 3 minutes.
(4) Once done, remove from heat and top with fresh lemon thyme.
Stir-fry assorted vegetables with basil leaves -
1 cup fresh asian basil leaves
2 cloves garlic (minced)
1/2 yellow onion (halved and split)
1/4 organic red bell pepper (cut into long strip)
1 small organic carrot (sliced)
1 small sweet potato (diced)
1/8 cup toasted cashew nut
few slices of thinly cut lotus root
some soup stock
(1) Heat up some oil on a cooking pan. Saute garlic and onion till fragrant.
(2) Add in sweet potato and stir-fry. Add in carrot and lotus root and stir fry. Add in some soup stock and put on the lid for a while, or till all ingredients slightly soft.
(3) Add in red bell pepper and stir fry. Put to lower temperature and toss in basil leaves. Add in some soup stock if too dry. Mix well and off fire. Transfer to a serving plate and top with some cashew nuts.
Steamed organic tofu with minced chicken and shallots
4 shallots (sliced)
1 piece lean chicken (minced)
2 cloves garlic (minced)
(1) Put tofu into cooked rice in rice cooker to roughly heat up the tofu.
(2) Separately, stir-fry garlic and minced chicken till cooked and brown. Once done, transfer to the tofu.
(3) Return to the frying pan and stir fry shallots till brown. Add on to tofu and serve immediately.
Black bean chicken feet soup -
2 chicken feet (blanched for 5-10 minutes)
1 large chicken carcass (blanched for 5-10 minutes)
2/3 cup black bean (soaked overnight)
1 honey date
some water
(1) Heat up some water in a slow cooker pot.
(2) Add in all the ingredients and slow cook for 6 hours.
