Steamed wheat-free banana prune muffin

Teatime : Steamed wheat-free banana prune muffin
Recipe:
Dry ingredients -
1/4 cup buckwheat flour
1/4 cup spelt flour
1 Tbsp arrowroot powder
1 tsp baking powder
Wet ingredients -
2 kampung egg
2 medium size banana
4 organic prunes (chopped) or around 2 Tbsp chopped organic prune
4 Tbsp homemade soya millet milk
1 tsp apple cider vinegar
1 Tbsp olive oil
Topping : dash of pysillium husk
(1) Mix dry ingredients together. Mix wet ingredients together except prune.
(2) Pour wet ingredients into dry ingredients and fold till flour no longer seen. Add in prune and roughly mix in.
(3) Scope into cupcake liner in muffin cup till 90% full. Add dash of pysillium husk on every muffin.
(4) Steam in preheated steamer for 15 minutes.
Made 6 muffins

Steamed strawberry banana muffin







































Recipe:

Dry ingredients -
1/4 cup cake flour
1/4 cup all purpose flour
1/4 cup buckwheat flour
1 tsp baking powder
1/4 tsp baking soda

Wet ingredients -
2 kampung egg
2 pisang berangan (mashed)
1 large strawberry (finely chopped and roughly mashed)
1 Tbsp vco
1/4 tsp apple cider vinegar
1 Tbsp homemade natural yoghurt

Mix wet and dry ingredients separately. Combine both, fold in 2 Tbsp of organic raisins and steam under preheated steamer for 15 minutes.

Note: Its been a while since i last made these, it is a weekend treat for few kids coming over. Lo had a few bites, i am reducing her wheat intake thus she couldnt have more ;)

Steamed butter cake




















































Recipe:

1/2 cup cake flour
1 tsp baking powder
75g unsalted butter (melted)
2 eggs (beaten)
1 tsp molasses sugar
1/8 tsp vanilla essence

(1) Beat eggs till foamy. Add in sugar and whisk till dissolve. Add in vanilla essence. Add in butter and mix well.

(2) Pour into flour and baking powder mixture. Fold till just nicely mix.

(3) Steam in preheated steamer for 15 minutes.

Made 4 cupcakes.

Results: This recipe yielded very soft and fluffy butter cupcake which i have been dreaming for. The reason is because of the low sugar content and using steaming method - which is much more suitable for my baby. The taste is a bit eggy and not suitable to keep for long, advisable to finish within a day or two.

Steamed pumpkin and strawberries muffin










































































































Recipe:

Dry ingredients -
1/4 cup all purpose flour
1/4 cup wholemeal flour
1 tsp baking powder
1/4 tsp baking soda

Wet ingredients -
1 egg (beaten)
Pumpkin puree from 2 slices of small pumpkin (about a medium size banana)
3-4 strawberries
1 Tbsp olive oil

Toppings: some raw rolled oats

(1) Mix wet ingredient and dry ingredients separately.

(2) Pour the wet ingredients onto dry ingredients and begin to fold till all just mix.

(3) Pour into cupcake liners lined in ramekins. Top with some raw rolled oats.

(4) Steam in preheated steamer in high heat for 12 minutes and medium heat for 3 minutes. Wait for 2 minutes before removing the lid. Tilt open the lid slightly for 1-2 minutes before dish out.

Yields: 4 muffins

Steamed wholemeal pumpkin muffin with oats topping (sugarless)






Recipe:

Dry ingredients -
1/4 cup all purpose flour
1/4 cup wholemeal flour
1 tsp baking powder
1/4 tsp baking soda

Wet ingredients -
2 eggs (beaten)
Pumpkin puree from 2 slices of small pumpkin (about a medium size banana)
1 Tbsp olive oil

(1) Mix wet ingredient and dry ingredients separately.

(2) Pour the wet ingredients onto dry ingredients and begin to fold till all just mix.

(3) Pour into cupcake liners lined in ramekins. Top with some raw rolled oats.

Steamed banana cashew nut muffin (07/11/14)









































































Recipe:

Dry ingredients:
1/2 cup all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1 Tbsp blended rolled oats
1 Tbsp wheat germ

Wet ingredients:
2 eggs (beaten)
5 small banana (pisang emas)
1 Tbsp Sunglo natural greek yogurt
1 Tbsp olive oil

(1) Mix wet ingredients together. Pour into roughly stirred dry ingredients.

(2) Fold till flour mix in and no longer seen.

(3) Steam in preheated steamer for 15 minutes. Wait for 2 minutes before dish out.

Yields: 5 medium large size muffins

Steamed black sesame pumpkin muffin





















Recipe (makes 2):
1/4 cup cake flour
1/2 tsp baking powder
1 tsp black sesame powder
3 Tbsp pumpkin puree
3 Tbsp natural yogurt
1 tsp olive oil

(1) Mix wet ingredients together, but stir in oil last.

(2) Mix dry ingredients together.

(3) Fold wet ingredients into dry ingredients and foil till the flour no longer visible.

(4) Steam in preheated steamer for 15 minutes.

Notes: Double or triple the quantity of ingredients for more muffins.

Results: The texture is overly soft (not wet). Will try adding baking soda and sugar in the future.


Steamed banana cranberries muffin (sugarless)




















Recipe:
1/2 cup cake flour
1 tsp baking powder
1/2 tsp baking soda
1 kampung egg (beaten)
2 medium size banana
1 Tbsp natural yogurt
1 Tbsp olive oil
2 Tbsp dried cranberries

(1) In sequence, mix egg, banana, yogurt and oil.

(2) Separately, stir together flour, baking powder and baking soda.

(3) Pour the wet ingredients onto dry ingredients and fold till all mixed. Roughly stir in dried cranberries.

(4) Steam in preheated steamer for 15 minutes.

Yields: 4 medium size muffins

Results: Simply soft, fluffy and naturally sweet

Steamed banana muffin with cream cheese filling






















Recipe:

1/2 cup cake flour
1 tsp baking powder
1 Tbsp homemade soya milk
1 Tbsp olive oil
1 egg (beaten)
2 medium size banana (mashed)
4 mini scopes cream cheese (chilled)

(1) Mix dry ingredients in a mixing bowl. Set aside.

(2) Beat egg till foamy. Add in mashed banana and mix well. Add in milk and oil.

(3) Pour wet ingredients into dry ingredients and fold till all mixed.

(4) Scope 1 Tbsp of batter into cupcake liner in cup cake holder. Add 1 mini scope of cream cheese (not too much else will explode like some of my muffins). Cover with the balance of the batter - around another 1 Tbsp of batter. Make sure the cream cheese is properly covered else might explode too.

(5) Give a light tap and steam in preheated steamer for 15 minutes.

Yields: 4 muffins

Steamed egg muffins with raisins and chia seeds




















Recipe:

1 egg
1/4 cup natural yogurt
1 tsp molasses sugar
3 ounce self raising flour
1 Tbsp organic raisins
pinch of chia seeds

(1) Beat egg till foamy. Add in sugar and continue to beat vigorously till a very foamy and pale colour formed. Slowly pour in yogurt and mix well.

(2) Fold in sifted flour and stop once the flour no longer seen.

(3) Add raisins by lightly press into the batter using a spoon. Scope batter into muffin cups lined with cup cake liners. Add pinch of chia seeds on top of the batter.

(4) Steam in preheated steamer for 15 minutes.

Yields: 3 muffins

Steamed cream cheese muffin with peanut butter filling





















Recipe:
1/2 cup self raising flour
2 eggs
2 Tbsp cream cheese (melted)
1/2 tsp agave nectar
1 Tbsp coconut oil
4 tsp peanut butter

(1) In a bowl, beat eggs till foamy. Stir in agave nectar. Add in cream cheese and mix well. Add in coconut oil and mix well.

(2) Pour the mixture into flour and fold till all ingredients well combined.

(3) Scope 2 Tbsp of batter in muffin cup followed by 1 tsp peanut butter. Top with 1 Tbsp batter to close up the filling. Repeat for the rest of the batter.

(4) Steam in preheated steamer for 15 minutes. Serve warm.

Yields: 4 muffins

Results: The muffin texture is not super fluffy but the peanut butter made the muffin very tasty

Steamed pandan yogurt muffin





















Recipe:
2/3 cup self raising flour
60ml pandan extract (blend 2 pandan with 80ml of water,
sieved over cheesecloth and keep the pandan juice)
2 Tbsp natural yogurt
1 Tbsp olive oil
1 tsp orange juice

(1) Mix pandan juice. yogurt, orange juice and olive oil in a bowl.

(2) Pour the mixture into flour and fold till all mixed.

(3) Steam in preheated steamer for 15 minutes.

Yields: 4 muffins

Results: Soft and moisture

Steamed strawberry muffin with yogurt and cheese




















Recipe:
1 cup cake flour
1/2 Tbsp baking powder
4-5 Tbsp cream cheese (premixed with a little of agave nectar and butter)
3 Tbsp natural yogurt
2 strawberries (roughly cut and drain excess water)
2 eggs (beaten till foamy)
1 1/2 Tbsp olive oil
1/2 Tbsp molasses sugar

(1) Sieve flour and baking powder together and set aside.
(2) Melt cream cheese, add in egg, sugar, yogurt and olive oil.
(3) Pour the wet ingredients into dry ingredients. Fold slowly till all mixed.
(4) Scope the batter into cup cake liners arranged in mold. Roughly put the chopped strawberries on top of the batter. Lightly tap the batter.
(5) Steam in preheated steamer for 15 minutes. Wait for 3 minutes before dish out. Serve warm to cold.

Yields: 8 muffins

Note: Batter before steaming was slightly thick and gluish.

Results: The outlook appearance doesnt seem fancy but the texture is soft.

Steamed banana blueberry muffins


 

Recipe:
1/2 cup whole wheat flour + 1Tbsp wholewheat flour
1 tsp baking powder
1/2 tsp baking soda
1 Tbsp coconut oil
1 egg
2 small to medium size banana
handful of blueberries (halved)

(1) Beat egg till foamy, mash in bananas, add in coconut oil.
(2) Sieve in flour, baking powder and baking soda.
(3) Fold slowly till all mixed.
(4) Stir in blueberries.
(5) Steam in preheated steamer for 15 minutes.

Yields: 5 muffins

Results: This is an attempt to make a different variety of banana muffins ie banana blueberry muffins following the success of banana muffins previously. The outlook appearance shown the blue dyed colour due to the blueberries. For future, will try to put blueberries on top, last instead of stir into the batter for better outlook appearance.

Steamed wholemeal green peas muffin

















Recipe:

1/2 cup wholemeal flour
1 tsp baking powder
5 Tbsp natural yogurt
1 Tbsp olive oil
3 Tbsp green peas (presteamed 5 minutes and pureed)
(1) In a bowl, mix flour and baking powder together.
(2) Blend green peas with yogurt till smooth. Add the blended mixture into flour mixture and fold till all mix. Lastly, mix in olive oil.
(3) Steam in preheated steamer for 15 minutes. Leave to cool for 2 minutes before dish out.
Yields: 5 muffins

Results: This is an attempt to make a healthier muffin for my baby. It is a successful attempt with no sugar, egg, salt and minimum white flour. The texture is very soft and the taste is mild and fragrant for baby.

Steam Yogurt Banana Muffin





















Recipe:
1/2 cup superfine flour
1 tsp baking powder
1 egg (beaten)
1 banana
1 Tbsp evoo
2 Tbsp natural yogurt
(1) In a big bowl, sieved flour and baking powder and set aside.
(2) In sequence, mix banana, egg, yogurt and oil. Put the mixture into no. 1 and fold slowly till all mix.
(3) Steam in preheated steamer for 15 minutes.
Yields: 5 small medium size muffins

Results: Did not rise high, but is an attempt to omit baking soda for a banana muffin.
Texture still soft.

Steamed Purple Sweet Potato Muffin

Recipe:

1/2 cup superfine flour
1 tsp baking powder
2 Tbsp natural yogurt
4 Tbsp homemade soya milk
1 small bowl pureed purple sweet potato
1 Tbsp coconut oil
Handful of organic raisins

(1) In sequence: Mix potato pureed, milk, yogurt and oil. Stir till all mixed.

(2) Sieve in flour and baking powder and fold till all mixed.

(3) Scope batter into cupcake liner, fill till 80% full. Arrange raisins on top of the batter and press in slightly.

(4) Steamed in preheated steamer for 15 minutes.

Yields: 4 muffin

Results: Eventhough added yogurt, the colour of the purple muffin still changed to slight bluish after steaming.
To experiment more for this recipe. However, the texture is soft.


Steamed Cream Cheese Muffin























Recipe:

4 tbsp self-raising flour
1/2 tsp baking powder
1 Tbsp olive oil
2 Tbsp cream cheese (melted)
1 tsp molasses
2 eggs
(1) Mix oil, molasses and cream cheese in a bowl.
(2) Add flour and baking powder and mix well.
(3) Beat eggs till foamy and add in 2 portion. Fold till all mix.
(4) Steam in preheated steamer for 15minutes. Serve warm.
Yields: 4 muffins

Note: The batter is slightly watery but after steam, rise nicely and texture is soft. A success try.
