Egg wrapped with fresh vegetables



















































Recipe:
1 kampung egg (pan fried and cooled)
some shredded cucumber
some shredded carrot
some chopped lettuce
some chopped tomato (i used red cherry tomatoes)
1 Tbsp greek yogurt

(1) Spread some yogurt onto pan fried egg.

(2) Arrange the vegetables in one line, 1/3 from the middle.

(3) Roll the egg, holding the ingredients tightly. Cut into smaller portions and serve accordingly.

Tomato and cheese omelette
















Recipe:
2 eggs (beaten)
1/2 tomato (diced)
2 slices of 2"x2" mozarella cheese
1 cube (1cmx1cmx1cm) shredded cheddar cheese
1 tsp cream cheese
1/8 cup finely diced yellow onion

(1) Heat up some butter on a frying pan. Saute onion till fragrant.

(2) Add in tomato and stir fry shortly. Add in eggs and let it pan fry shortly.

(3) Add in cheese and when one side is slightly hard enough to be able to flip, start to wrap the egg into omelette shape. Dish out before it overcooked.



I did it again not long after and we served with organic strawberry jam. My toddler had it with some apple slices.


















The only different is that i added some chopped celery and it tasted awesome !



We had tried the recipe for our dinner, where we served along stir-fried onion chicken in fermented bean sauce -
















The egg however put only a little bit of cheese and it was cooked longer just to suit the meal.

Omelette with orange glazed tempe
















Recipe:

Omelette -
2 kampung eggs (lightly beaten)
1 garlic (minced)
1 shallot (diced)
some diced red tomato
2 Tbsp chopped organic purple spinach
2 Tbsp finely diced bittergourd
some shredded mozarella cheese
some cream cheese
vco for cooking

(1) Heat up vco on a frying pan. Quick saute garlic and shallot, followed by tomato and bittergourd.

(2) Add in spinach and saute for a little while.

(2) Pour in eggs and stir the egg. Once the egg slightly set on one side, and light bubbles formed on egg, add in cheese on and around the egg with ingredients.

(3) Very quickly. fold the egg into an omelette like shape. Serve immediately.

Note: I overcooked the omelette, thankfully it still taste good :) It would be nicer if it is slightly melt in the mouth.


Orange glazed tempe -















About 7 pieces 1"x1" organic tempe (presteamed and cooled)

For the sauce, combine -
1 tsp wild honey (add after cooking)
1/2 large orange (juiced and some flesh)
1 Tbsp orange skin (finely cut)
1 slice orange (to add after cooking)


(1) Heat up some vco on a frying pan. Pan fry tempe till slightly brown on both sides. Remove from heat and set aside.

(2) Heat up orange sauce in medium temperature. Once the sauce thicken, remove from heat. Stir in honey and the juice from 1 slice orange.

(3) Slowly, drizzle the sauce over pan fried tempe earlier. Serve immediately.

Omelette and cabbage yogurt


















Recipe:

Omelette -
2 kampung eggs
some diced yellow onion
some diced red tomato
1 Tbsp of chopped tarragon
2 slices mozzarella cheese
1 knob butter

(1) Heat up butter on a frying pan. Quick saute onion, and then tomato.

(2) Beat in eggs and roughly mash the yolk and stir the egg. Swirl the pan around but not too much, so that the egg skin would be thicker.

(3) Add in tarragon and cheese. Once the egg is half-cooked, fold the egg into an omelette like shape. Serve immediately.


Cabbage yogurt -
1 cup shredded cabbage
2 Tbsp natural yogurt

Mix all in a bowl and serve with omelette.

Steamed egg with chicken and spinach
















Recipe:
1-2 Tbsp shredded chicken
1 bunch chopped organic english spinach
1 kampung egg
8 Tbsp filtered water (or use a egg water ratio of 1:2)

(1) Beat egg in a shallow plate. Add in water and mix well.

(2) Add in spinach, and then chicken.

(3) Steam under high heat with the cover slightly opened, for 5-8 minutes.

Steamed Egg







































I recently did a variety of steamed eggs for the 18mth old + little one. Surprisingly, most of the time were actually made as her breakfast. Soft steamed egg is warmth and superb as breakfast, it can be so versatile. The most important is that the little one likes it.

Picture (clockwise) from top left:

(1) Basic steamed egg :
1 kampung egg
1 tsp vco
1.5 Tbsp soup base (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(2) Steamed egg with vegetable and pear
1 kampung egg
1 Tbsp diced pear
2 Tbsp finely chopped nai bak
1.5 Tbsp homemade milk (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(3) Steamed egg with pear
1 kampung egg
2 Tbsp diced pear
1.5 Tbsp homemade milk (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(4) Steamed egg with mushroom, vegetables and cream cheese
1 kampung egg
1 Tbsp chopped shitake mushroom
1 Tbsp finely chopped nai bak
1 tsp cream cheese (stir and mix well)
1.5 Tbsp filtered water (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(5) Steamed egg with vegetable
1 kampung egg
1 tsp vco
2-3 Tbsp finely chopped nai bak
1.5 Tbsp filtered water (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

Mustard leaves shallot omelette






Recipe (Made 1 adult serving):
2 free-range egg (beaten)
2 knobs unsalted butter
1 Tbsp shredded mozzarella cheese
2 stalks fresh mustard leaves (chopped small)
1 shallot (thinly sliced)


(1) Mix cheese into beaten eggs and set aside.

(2) Heat up some butter on a cooking pan. Saute shallot till fragrant. Add in mustard leaves and saute for a short while. Immediately, dish out the ingredients and pour onto egg and cheese mixture.

(3) Return to cooking pan and heat up the remaining butter. Pour the egg mixture onto the pan carefully. Start to fold into omelette like egg using a flat cooking ladle once it begins to set on one side. (I did about 3-4 folds)

(3) Serve with dash of organic psyllium husk and some organic raisins.

Parsley omelette with butter and cheese






















Recipe (Made 1 adult serving):
2 free-range egg (beaten)
2 knobs unsalted butter
1 Tbsp shredded mozzarella cheese
1-2 stalks fresh parsley (chopped)


(1) Mix cheese and parsley into beaten eggs.

(2) Heat up butter on a cooking pan. Pour the egg mixture onto the pan carefully. Start to fold into omelette like egg using a flat cooking ladle once it begins to set on one side.

(3) Serve with organic raisins and dash of nutritional yeast.

Egg wrapped with mushroom, mix vegetables and cheese

Lunch: 
-Egg wrapped with mushroom, mix vegetables and cheese
- Steamed yellow sweet potato

Ingredients for egg wrapped:
4 fresh button mushroom - mixture of brown and white mushroom (sliced)
1/8 cup carrot slices
1/8 cup yellow onion slices
2 cloves garlic (minced)
3-4 stalks organic spinach (chopped)
2 kampung egg
3 slices mozzarella cheese

Baked squid frittata

Dinner: Baked squid frittata for the 17M 3D lo
Recipe:
2 eggs (mix with 1tsp unsalted butter, 1 Tbsp soup stock, 1 tsp chopped parsley)
2 Tbsp finely cut squid (marinated with dash of ground turmeric and cinnamon, presteamed)
2 shallots (finely diced)
2 Tbsp finely cut lotus root
3 organic cherry tomatoes (finely diced)
2 stalks chopped organic spinach
(1) Put ingredients in 4 mini ramekins. Pour on egg batter accordingly.
(2) Baked at preheated oven at 180c for 10 minutes and 150c for another 10 minutes.

Scrambled duck egg with garlic and chinese spinach, served with diced avocado.

This breakfast gave us an instant boost of protein, calcium, iron, vitamin A, omega-3 fatty acid, antioxidant and some good fat for the wednesday morning ! It should keep us filling till lunch.
Recipe:
2 duck egg (mix in 2 Tbsp homemade flaxseed milk and lightly stir)
2 clove garlic (crushed)
1 cup chinese spinach (chopped)
1/2 avocado (diced)
(1) Heat up some vco on a frying pan. Saute garlic for a short while.
(2) Add in spinach and pour in egg batter. Stir fry to a scrambled like soft and moisture texture.
(3) Once done, dish out and served with cut avocado.

Vegetables Omelette





























Since we are going out. I prepared a simple vegetables omelette for the 16M 13D lo.
This is my first time using watercress to pan fried egg. Thank you Christina Leong for the idea.
Ingredients:
garlic
carrot
bittergourd
purple spinach
watercress

Steamed mini vegetables egg















Recipe:
2 kampung eggs (lightly beaten)
2 Tbsp natural yogurt
1 tsp vco
1/2 tsp apple cider vinegar

1 button mushroom (finely cut)
1/4 carrot (finely diced)
1 shallot (finely diced)
2 cloves garlic (minced)
1/8 yellow bell pepper (finely diced)
1 stalk mustard leave (finely chopped)

(1) Mix everything together in a bowl.

(2) Pour into silicon mini mould, fill up about 80% of the mixture.

(3) Steam for 8-10 minutes or till cooked.

Results: With mini bite size, this is an easy egg meal without much mess when baby is eating and a good way to introduce vegetables in a subtle manner.

Steamed rice with egg and vegetables





















































































Recipe:
1 cup cooked rice (leftover, overnight rice)
3 kampung eggs (lightly beaten, sieved to remove bubbles if needed)
1 Tbsp natural greek yogurt
1 Tbsp water 
1 baby corn (thinly sliced)
8 slices carrot (finely chopped)
handful chopped cauliflower
handful of sliced mozzarella cheese
handful of roughly cut spinach leaves

(1) Lay cooked rice on a steaming plate. Press to remove rice from crumbling.

(2) Add in cauliflowers, baby corns and carrots. Mix well.

(3) Pour in beaten egg, and stir till all ingredients coated with egg. Add in yogurt and water and mix well.

(4) Steam in steamer for 12 minutes. Add in spinach and top with cheese in last 3 minutes. Serve once slightly cool down.

Yields: 1 adult portion.

Cucumber egg roll









































Recipe
2 eggs (lightly beaten)
1/4 tomato (finely chopped)
some shredded cabbage (finely chopped further)
some shredded fresh cucumber

(1) In a bowl, mix egg, tomato and cabbage together. Heat up frying pan with some olive oil, pour the mixture from the centre and swirl around to distribute the mixture evenly - pan fry at 160 farrenheit. Put on the lid for few minutes.

(2) Once the side harden, flip over carefully and pan fry till 90% cooked. Immediately remove from frying pan while it hot and arrange some shredded cucumber in a line to form egg roll.

(3) Roll to the front slowly, pressing the cucumber tightly till the egg roll is firm for easy cutting.

(4) Divide and cut into smaller portion. Serve immediately.

Tomato and egg tofu

Recipe:
Half piece silky organic tofu
1 tomato
3 eggs (beaten)
chopped scallions
1 bowl pureed papaya w/ vegetable stock and 1 tsp sesame oil

(1) In a frying pan, fry egg till cooked (scrambled egg alike) and set aside.
(2) Put in pureed sauce, in sequence add in tofu and tomato.
(3) Lastly, put in fried egg done earlier.
(4) Simmer a while, and add scallions. Serve hot.

Results: In rasa malaysia recipe, it calls to fry tofu and tomato first before putting in the sauce, thus
the tofu will be easier to handle and not broken apart. Besides, the sauce will not dry out so much.
