Steamed dual layer banana lemon sponge cake (second attempt)












































































































Recipe:

Banana cake layer
2 big banana (pisang berangan)
1 tsp baking soda

3 eggs
1/2 Tbsp molasses sugar
100g superfine flour
1 tsp baking powder
1 Tbsp coconut oil

Sponge cake layer
2 eggs
1 Tbsp molasses sugar
3 Tbsp natural yogurt
65 g cake flour
1 tsp baking powder
1/2 lemon juice
1/2 lemon zest (finely grated)

P/S: Using a 7" baking pan

Banana cake 
(1) Mix banana and baking soda, set aside.
(2) Beat eggs till foamy, add in sugar and continue to beat till ribbon stage.
(3) In sequence, mix in: sieved flour, baking powder, banana mixture in no.1 and oil. Fold till all mix.
(4) Steam in preheated steamer for 15 minutes. Once done, remove from steamer and set aside.

Sponge cake 
(1) Beat eggs till foamy, add in sugar and continue to beat till ribbon stage.
(2) Add in yogurt and lemon juice and zest. Sieved in flour and fold till all mix.
(3) Pour the batter on top of banana cake and further steam for another 15 minutes.

Results: 

The banana cake layer is very soft and fluffy.

However, for this time, right after steaming, the sponge cake layer was slightly sunk after it has rose nicely during steaming. I am still figuring out how to stabilise it after steaming, whole cake is harder to control compare to steam in cup cake size. Nevertheless, the result was satisfying.

Steam strawberry cheesecake




















Recipe:

1 cup cake flour
1 tsp baking powder
4 Tbsp cream cheese
1 Tbsp agave nectar
3 eggs
3 large strawberry (pressed into chunks and remove juice)
1 Tbsp extra virgin olive oil

(1) Using an electrical mixer, mix cream cheese with agave nectar till smooth. Add in egg one by one and mix well.

(2) Add the mixture into sieve flour with baking powder. Add in olive oil and fold slowly till all mixed. Once the batter properly mixed, pour it into a 5" diameter baking pan.

(3) Stir in strawberries into the batter using spoon. Use spatula to smooth the surface and to make sure batter is balancely filled all round (sides and middle). Lightly tap the baking pan.

(4) Steam in preheated steamer for 30 minutes. Wait for 5 minutes before dish out.

Results: This is an attempt to use liquid sugar replacing the normal sugar, and to experiment more into steaming whole cake rather than in muffin cups. The texture is slightly dense and a bit pudding-like maybe due to the strawberry and sugar syrup. The taste is sweet enough but liquid sugar may not be suitable in replacing dry sugar as it is heavy and less fluffy.

Steamed dual layer banana sponge cake


Recipe:

1/2 local lemon (juiced)

(2) Beat eggs till foamy, add in sugar and continue to beat till ribbon stage.
(3) In sequence, mix in: sieved flour, baking powder, banana mixture in no.1 and oil. Fold till all mix.
(4) Steam in preheated steamer for 15 minutes. Once done, remove from steamer and set aside.

Results: 

The banana cake layer is very soft and fluffy. 

However, for the sponge cake layer there were few things that took place. First - i have replaced the original recipe that calls for milk to yogurt. Second, during steaming - after pour in the batter on top of banana cake layer, towards the end, the cloth wrapping the lid cover touches the top part of the cake as it rises thus might have affected it to collapse after rises. Thirdly, i have reduced the sugar to only 1 tsp. These pointers shall use as reference for future improvement.

Steamed whole carrot cake (sugarless, eggless, oil less)
























Recipe:

60g cake flour
2 tsp baking powder
1 tsp cinnamon powder
140g organic oats (blended into powder form)
(mixed with 1 cup homemade soya milk)
40g walnuts (roasted till crispy and coarsely chopped)
40g sultanas (roughly chopped)
120g carrots (finely chopped)

Topping:
1 cup cream cheese (melted)
1 tsp unsalted butter (melted)
1 tsp agave nectar

(1) Mix walnuts, sultanas and carrots. Pour in oats milk mixture and mix well.
(2) Sieve in cake flour, baking powder and cinnamon powder and fold well.
(3) In a 7" diameter baking pan, pour in the mixture slowly, and smooth out the top using spatula.
Give a light tap.
(4) Steam in preheated steamer for 30minutes. Once finish steaming, wait for 5-10 minutes before
removing the cake. Remove, and put on cooling rack.

Butter cream cheese frosting:

(1) Using a food processor, mix cream cheese, butter and agave syrup.
(2) Mix till it looks creamy. Put in fridge to cool.
(3) Spread on top of the carrot cake and serve.

Basic steamed sponge cake

Recipe:

200g superfine flour
150ml homemade soya milk
100ml water
30g sugar (i used 28g)
1 tbsp squeezed local lemon (limau kasturi)
2 tsp baking powder

(1) Using 7" diameter baking pan, line parchment paper at the bottom and side.
(2) Mix milk, water, sugar and lemon and stir till all properly mixed.
(3) Sieved in flour and baking powder mixture into no.2.
(4) Pour batter into lined baking pan. Using spatula, smooth the top surface and slightly recess
the middle part.
(5) Steam for 30 minutes, wait for 5 minutes before removed. Serve warm or use as sponge for fruit cakes and other decorative cakes.

Note: Is a very small cake, the thickness is slightly less than half of this baking pan. Can double the recipe to make thicker sponge.
