Steam strawberry cheesecake




















Recipe:

1 cup cake flour
1 tsp baking powder
4 Tbsp cream cheese
1 Tbsp agave nectar
3 eggs
3 large strawberry (pressed into chunks and remove juice)
1 Tbsp extra virgin olive oil

(1) Using an electrical mixer, mix cream cheese with agave nectar till smooth. Add in egg one by one and mix well.

(2) Add the mixture into sieve flour with baking powder. Add in olive oil and fold slowly till all mixed. Once the batter properly mixed, pour it into a 5" diameter baking pan.

(3) Stir in strawberries into the batter using spoon. Use spatula to smooth the surface and to make sure batter is balancely filled all round (sides and middle). Lightly tap the baking pan.

(4) Steam in preheated steamer for 30 minutes. Wait for 5 minutes before dish out.

Results: This is an attempt to use liquid sugar replacing the normal sugar, and to experiment more into steaming whole cake rather than in muffin cups. The texture is slightly dense and a bit pudding-like maybe due to the strawberry and sugar syrup. The taste is sweet enough but liquid sugar may not be suitable in replacing dry sugar as it is heavy and less fluffy.
