Butter fried rice
Recipe:
3 cloves garlic (chopped)
1 shallot (chopped)
1 stalk scallion (roughly cut)
1 egg (beaten)
1-2 knob unsalted butter
1/4 cup garden green peas
1 small slice of chicken breast (chopped and minced)
estimated amount of shredded mozarella cheese
1/2 cup basmati rice (cooked and cooled)
(1) In a non stick frying pan, pour in beaten egg. Once harden, flip and roughly stir. Once cook but texture still soft, remove from pan immediately.
(2) Using the same frying pan, add butter and saute garlic and shallot till fragrant (but not brown). Add in minced chicken and stir fry till the meat separated (use ladle to roughly cut).
(3) Add green peas and fry till soft. Stir in scallions, cook for 1 minute and pour in the cooked rice immediately. Stir fry till all mix and off fire.
(4) Pour the fried rice into a bowl and top with shredded mozarella cheese. Steam the rice for 3 minutes or till cheese melted and absorbed into the rice. Serve warm.
Serving: 1 adult portion
Results: Although there is no seasonings, but the taste is really nice. I reckon the butter helps to add taste to it. Will definitely give it a try again with different ingredients in the future.
