Chicken with carrot wrap
Inspired by Top 10 Kid-Friendly Wrap , i decided to make wrap for my kids breakfast, i thought it would be easy. I found that, to wrap the ingredients nicely is an acquired skill@! I am determine to learn as i make more because it is a fun eating experience for me and the kids. My children love to participate in tossing in the ingredients too.
From the link, there are tonnes of variety that could refer to, i choose the chicken wrap for a start. I also cook the carrot slightly as my daughter told me she prefers it cooked than raw. My next 'wrap' project would probably be one that using avocado, but that would be after i replenish avocado in my kitchen. Lets move on to the chicken wrap recipe.
Ingredients -
1 cup antibiotic and hormone free chicken fillet (cut small)
1 small size carrot (cut into thin slices or texture that your kids like)
some natural cheese (shredded)
some cream cheese (soften)
2 rye wraps (shown in picture below)
Method -
FOR THE FILLING
1. Marinade chicken pieces with some sea salt, thyme and pepper. Leave for 10 minutes.
2. Stir fry chicken till cook. Put aside.
3. Stir fry carrot till it is slightly soften. Dish aside.
TO PREPARE THE WRAP
1. Lay 1 wrap across a flat working top.
2. Spread some cream cheese. (note not too much as it would be heavy and the wrap will tear)
3. In sequence, put chicken, carrot and top with cheese.
4. Start to roll from one end, hold firmly while rolling till all the ingredients are fully covered
and it is intact. Cut and divide into half using a sharp knife.
5. Serve immediately or chill to keep fresh before consuming.

RYE WRAP (which could be easily get from Village Grocer, Malaysia)
Organic Banana Muffin with oat topping
I have made many versions of banana muffins. For this one, i tried without oil - it is slightly dry. But it goes very well when eat with cream cheese. Since i am running out of cinnamon powder, i only use nutmeg powder and the outcome still good.
Ingredients -
2 medium size banana (mashed)
1 kampung egg
1 tsp organic vanilla extract
1/8cup filtered water + 2tsp organic chia seed (mix for 5 minutes)
3/4 cup organic self raising flour
1tsp nutmeg powder
Some rolled oat for sprinkle
Method -
1. Mash banana. Add in egg.
2. Add in all the rest of the wet ingredients.
3. Add nutmeg powder and flour. Mix well.
4. Transfer the batter into muffin cups. Sprinkle some rolled oats on top. Press the oat slightly to make sure it sticks well to the batter (use a small spoon).
5. Bake in preheated oven at 180c for 30 minutes. Turn on the fan and increase temperature to 190c for the last 5 minutes.
6. Serve with some cream cheese.
Yield 6 medium size muffins.

Quick Flat Bread
Today, i made this quick flat bread as family's breakfast. Do not be deceived by its outlook, it tasted good. It took only 20 minutes to bake, no fuss no mess and no need to keep any leftover. The recipe easily double up for more portions.
(Made 1 or 2 portion)
Ingredients :
1/2 cup filtered water
1 cup flour (i used 70% organic self raising flour, 15% organic tapioca flour, 15% organic buckwheat flour)
1 tsp natural baking powder
1/4tsp himalayan pink salt
1/2 Tbsp Olive Oil
Dash of garlic powder and red cayenne pepper
Some dried thyme (sprinkle prior to baking)
1. Mix everything in a bowl except thyme.
2. Preheat oven to 190c/200c (adjust according to your oven).
3. Spread the mixture over parchment paper on a baking pan, about 1/2 thick. It may be runny, but the shape should be intact.
4. Bake for 10minutes on each side (Total 20 minutes)
5. Enjoy with jam or nut butter !
Verdict : We woke up rushing as i was preparing my daughter to school. This was the best bet ever after focaccia came into my mind. A must keep recipe during rushing time. We had it with organic strawberry jam and organic peanut butter, it was so good ! My next target is to try a different kind of flour blend and possibly gluten free.

Rolled oat in almond milk
[2yrs 5mths] I made this savoury rolled oat in almond milk for our breakfast this morning.

4 Tbsp organic rolled oat (soak overnight)
2 Tbsp organic almond powder
2 Tbsp organic sweet corn (i removed from cob)
1 big white button mushroom (diced)
2 Tbsp shredded organic broccoli (i only use floret part)

(1) Using a sauce pan, heat up sufficient water till boiling, add in rolled oat and reduce temperature slightly. Cook till soft.
(2) Add in sweet corn and button mushroom and cook shortly.
(3) Put to low temperature and stir in almond powder. Lastly, add in shredded broccoli and dish out immediately after 1-2 minutes.

Oat pancake
Recipe (made 15 mini pancakes):
1/2 cup organic rolled oat
1/2 tsp baking powder
1/2 tsp organic cinnamon powder
1/2 of large banana
2 egg white
1/4 cup plain yogurt
2 Tbsp milk kefir
1/2 tsp organic/pure vanilla extract
(1) Blend all ingredients using a food processor.
(2) Scope equal amount each time - about 1.5Tbsp (for mini pancake size), and pan fry on both sides till brown or cooked.

Homemade Pretzels
Recipe:
1.5 cup warm water
1 1/8 tsp active dry yeast
1-2 Tbsp molasses sugar
1 tsp himalayan pink salt
1 cup high protein flour
3 cups unbleached plain flour
water bath preparation :
2 cups warm water
2 tbsp baking soda
topping :
4 Tbsp butter
topping (for adult) :
after brush with butter, add 'cinnamon + sugar' mixture
(1) Sprinkle yeast on warm water in a large mixing bowl, stir and mix well.
(2) Add sugar and salt, stir to dissolve.
(3) Add flour and mix well. Transfer the mixture into bread maker and let it knead till smooth - around 30 minutes. Once done, let it proof for 30 minutes.
(4) Prepare water bath, stir occasionally when in use.
(5) Pull some dough and knead slightly, roll into a long thin rope (less than 1/2 inch thick), and shape it. Dip pretzel into water bath and place on parchment paper (greased with oil) on baking pan.
(6) Let the pretzel rise slightly (optional), and bake in 175c for 8-10 minutes or until lightly brown. Coat with butter and serve accordingly.

Mixed fruits salad breakfast
Ingredients:
golden kiwi
grapes
orange
apple
romaine lettuce
some lemon juice
Mix all ingredients in a bowl and serve immediately.

Banana blueberries pancake
Recipe:
1 banana (mashed)
2 kampung eggs (beaten)
2/3 cup chopped blueberries
1 Tbsp organic apple cider vinegar
2 Tbsp almond meal
1 Tbsp coconut flour
(1) Mix all ingredients in a bowl.
(2) Heat up some vco on a frying pan, and scope and drop 1.5 Tbsp pancake batter onto frying pan.
(3) Pan fry on both sides till golden brown or cooked. Once done, transfer to a serving plate carefully.
(4) Let stand to cool slightly before serving.
We served with homemade milk kefir and blueberries.
Grapes pancake
Recipe:
1/2 cup unbleached cake flour
1 cup raw milk (I used brightcow)
1 cup chopped grapes
(1) Mix all ingredients in a big bowl.
(2) Heat up some vco on a frying pan. Scope 1.5 Tbsp pancake batter and pan fry till cooked / lightly brown on both sides.
(3) Once done, let it cool slightly and serve immediately.
We served with grass-fed butter and organic strawberry jam.
We did it again with the combination of banana without using flour. We served along with some fresh fruits instead. The recipe is as below -
1 banana (mashed)

1 Tbsp coconut flour
2 eggs
1/2 cup raw milk
1 cup chopped grapes
Another way of us enjoying the pancake is to eat along avocado. Basically, we just mash some ripe avocado and spread on top of the pancake. It tasted delicious.
Salad Breakfast
Ingredients :
Grapes
Shredded carrot
Shredded cucumber
Chopped raw cashew nut
Greek yogurt (from Brightcow)
Mix all ingredients in a ceramic bowl and serve immediately.

Wholemeal bread with avocado and egg
Recipe for avocado egg spread:
1 hardboiled egg (mashed)
1 small ripen avocado (mashed)
Mix all ingredients and use as bread spread.
Recipe for bread (in sequence):
1 cup warm water
2/3 cup mixture of 1 egg, milk kefir and natural greek yogurt
2 Tbsp olive oil
1/4 tsp himalaya pink salt
1 cup wholemeal flour
2 cup bread flour
1 tsp molasses sugar
1.5 tsp active instant yeast
Before it starts baking, i sprinkled wheat germ generously on top for extra fibre.
Bread machine: Tesco Breadmaker
Crust: Medium
Size: 2.0lb
Results: I tried adding sugar and salt for the first time since introducing bread to my baby, now toddler. It didnt give much difference to me - probably tastier, but hard to distinguish. My toddler had the bread with avocado egg spread, complete with homemade milk kefir and some diced mango.

Papaya and mango in milk kefir
Ingredients:
diced papaya
diced mango
homemade milk kefir (i used bright's raw cow's milk)
Step: Mix all ingredients and serve accordingly.
Brown rice cereal
Recipe (using Philips soy milk maker):
1/2 cup organic pearl brown rice (soak for 24 hours - with mixture of filtered water and some apple cider vinegar)
12 lotus seeds (remove the bitter part)
1/8 cup organic almond nuts (soak in filtered water for 24 hours)
1/8 cup organic white sesame seed and black sesame seed
(1) Put all ingredients in soy milk maker except sesame seed.
(2) Set to multi-grain mode and let it cooks for 20-30 minutes.
(3) Once done, serve with sesame seed mixture and some banana slices.
Verdict : This is a really delicious cereal and i like that using the soy milk maker actually enable me to soak all the ingredients prior to cooking it. Before having this gadget, we actually blend the rice / brown rice and use without soaking. It didnt help to eliminate phytic acid, after which we didnt cook cereal on our own anymore. With this gadget now, we can start doing our own cereal once again !
Tomato and cheese omelette
Recipe:
2 eggs (beaten)
1/2 tomato (diced)
2 slices of 2"x2" mozarella cheese
1 cube (1cmx1cmx1cm) shredded cheddar cheese
1 tsp cream cheese
1/8 cup finely diced yellow onion
(1) Heat up some butter on a frying pan. Saute onion till fragrant.
(2) Add in tomato and stir fry shortly. Add in eggs and let it pan fry shortly.
(3) Add in cheese and when one side is slightly hard enough to be able to flip, start to wrap the egg into omelette shape. Dish out before it overcooked.
I did it again not long after and we served with organic strawberry jam. My toddler had it with some apple slices.
The only different is that i added some chopped celery and it tasted awesome !
We had tried the recipe for our dinner, where we served along stir-fried onion chicken in fermented bean sauce -
The egg however put only a little bit of cheese and it was cooked longer just to suit the meal.
Mix fruits salad in salsa style
Recipe:
red coral lettuce (chopped)
green coral lettuce (chopped)
blueberries
oranges (diced)
golden kiwi (diced)
lemon juice
tomato juice
Add all ingredients and give a good toss. Serve immediately.

Omelette and cabbage yogurt
Recipe:
Omelette -
2 kampung eggs
some diced yellow onion
some diced red tomato
1 Tbsp of chopped tarragon
2 slices mozzarella cheese
1 knob butter
(1) Heat up butter on a frying pan. Quick saute onion, and then tomato.
(2) Beat in eggs and roughly mash the yolk and stir the egg. Swirl the pan around but not too much, so that the egg skin would be thicker.
(3) Add in tarragon and cheese. Once the egg is half-cooked, fold the egg into an omelette like shape. Serve immediately.
Cabbage yogurt -
1 cup shredded cabbage
2 Tbsp natural yogurt
Mix all in a bowl and serve with omelette.
