Dinner Dishes

Recipe:

Steamed red snapper with ginger and parsley -
1 piece red snapper
2 knob old ginger (sliced)
1 cup fresh parsley leaves
1 Tbsp apple cider vinegar

(1) Marinate fish with apple cider vinegar for 15 minutes.

(2) Put fish in a steaming bowl. Top with ginger slices and steam for 10 minutes.

(3) Once done, add on fresh parsley leaves. Serve immediately.

Stir-fry tong hoe leaves -
1 bunch of tong hoe leaves
3-4 cloves garlic (minced)
1/2 cup soup stock

(1) Saute garlic till fragrant. Add in tong hoe leaves, all at once and saute till almost cook,
around 5 minutes

Note - this is my first time cooking this vegetables, it is a very quick cooked greens, has a taste similar to english spinach. My hubby and baby they dont really like the special taste of this vegetables.

Steamed silken tofu with minced beef and potato -
1 small piece lean beef (finely chopped)
1/2 organic white potato (finely chopped)
1/2 cup homemade milk (i used remaining mixed grain milk i made)

(1) In a steaming bowl, put in tofu, and top with beef and potato. Steam for 5-6 minutes or till beff almost cook (do not over steam)

Note - I dont really like the combination of this dish with tofu. I would think stir-frying the beef and pour over a 2-3 minutes steamed tofu should be more delicious. The beef tasted raw using steaming method, maybe if marinate with tastier sauce would be better. Besides, the tofu became too moisture with the milk addition.

Sweet Corn Chicken Soup -
1 whole organic sweet corn (chopped in 3 parts)
1 whole organic carrot (cut into large chunk sizes)
1 chicken drumstick
10-12 gojiberries
1 celery (cut into 2 inches length)

(1) Blanch chicken drumstick for 5-10 minutes. Set aside.

(2) Using a small slow cooker pot, heat up some water. Once it is hot, add in all the ingredients except gojiberries and let it cook.

(3) 5 minutes before done, add in gojiberries. Serve immediately once done.
