Dinner Dishes




















I got this idea of making cauliflower fried 'rice' from a close friend of mine, whereby we actually using cauliflower in replacement of rice. This is definitely not something new, but it is my first time trying it. I simply chopped the cauliflower into floret sizes and subsequently pulverised using a blender till it achieved rice size. I like the outcome and this idea very much, and would definitely make this again. Thank you Sharon Tan !

Recipe:

Cauliflower fried 'rice' -
2 full cup pulverised cauliflower
4 cloves garlic (minced)
1/2 yellow onion (chopped)
1 red chilli (sliced)
4 organic long bean (thinly sliced)
1/8 cup diced egg plant
6 organic dried shitake mushroom
some soup stock
some homemade hazelnut hemp milk <click here>
some chopped spring onion for garnishing

(1) Heat up some oil in cooking pan. Saute garlic, onion and chilli till fragrant.

(2) Add in long bean and stir fry. Add in egg plant and stir fry. Add some milk or soup stock if too dry.

(3) Scrape the ingredients to one side, add in shitake and stir fry till the juice released and smell fragrant. Add some milk or soup stock if too dry.

(4) Pour in cauliflower 'rice', mix and stir fry with the rest of the ingredients. Once done, dish out immediately and garnish with some spring onion, serve immediately.


Steamed treadfin fish -
1 whole treadfin fish
4 cloves garlic (minced)
1 knob ginger (cut into strip)
1/2 yellow onion (halved and split)
handful of chopped spring onion

(1) Marinated fish with lemon juice for 1 hour.

(2) Discard marinated juice and transfer fish into a steaming plate. Rub with garlic, add on ginger and onion. Steam the fish for 10 minutes.

(3) Top with spring onion and steam for another 3 minutes. Wait for 2 minutes before dish out.
