Dinner Dishes


























































Recipe:
-Malaysian beef curry
-Steamed XL size okra
-Steamed egg and baby corn for the little one
-Winter melon chicken soup

Malaysian beef curry :

Beef Marinade (for 30 minutes) -
1 cup beef parts (trimmed and cut into smaller pieces)
some lemon juice

Curry paste (blend all ingredients using a food processor) -
20 small shallot (sliced)
6 cloves garlic (peeled)
8 long fresh red chillies (deseeded)
2 Tbsp ground turmeric
4 knob fresh ginger (peeled and roughly chopped)
some lemon juice

Other ingredients -
2 lemongrass stalks (tougher outer leaves removed, roughly chopped)
5 curry leaves
2 cup fresh coconut milk

(1) Heat up some vco on a cooking pan. Saute curry paste, lemongrass stalks and curry leaves for 5 minutes or till fragrant.

(2) Add in marinated beef and stir-fry for 10 minutes, till it is brown.

(3) Add in coconut milk and simmer in medium low heat for 1 to 1.5 hours, till the meat is tender and the sauce has thickened.

Winter melon chicken soup -
1 large chicken carcass (blanched for 5 minutes)
2 cup winter melon, cut into chunk size
5 red dates
2 black dates
handful of wolfberries

(1) Heat up some water in a small slow cooker pot. Add in all the ingredients except wolfberries. Let it cook for 6 hours.

(2) Add in wolfberries right before served.
