Dinner Dishes



















Recipe:

Steamed mushroom potato chicken -
5 pieces chicken parts (i used 2 chicken drumstick, 2 chicken breast, 1 chicken thigh)
6 organic dried shitake mushroom (presoaked till mushroom soften)
1 organic potato - quartered (precooked with soup in slow cooker pot)
1/2 large yellow onion (quartered and split)
2 clove garlic
3 sorrel leaves

(1) Marinate chicken with 1 Tbsp sesame oil, dash of mixed herbs and dash of cinnamon powder - for about 1 hour.

(2) Put chicken and all ingredients on a plate, steam under high heat for 10 minutes and low heat for 10 minutes.

Stir-fry king leaves (daun raja) -
4 cloves garlic (minced)
2 Tbsp soup stock (i used peanut chicken soup i cooked in slow cooker)
1 bunch king leaves

Heat up some vco on a cooking pan, saute garlic till fragrant. Add in king leaves and stir fry for a short while. Add some soup stock, dish out when it is almost cook.

Note - This vegetable cook turn overcook pretty fast. It was pretty light green when i dish out but it turns darker immediately due to the hot gravy in the leaves i suppose. Less gravy would help to maintain the colour bright green i reckon.

Pan-fried egg with dragon leaves -
Some leftover ingredients from afternoon (click here)
1 cup chopped dragon leaves
2 cloves garlic (minced)
2 kampung egg (lightly beaten)

(1) Heat up some vco on a cooking pan, saute garlic till fragrant. Add in all the leftover ingredients earlier and stir fry for a little while.

(2) Add in dragon leaves and pan fry a short while.

(3) Pour in egg batter and swirl around in order for the egg batter to flow all round the pan.

(4) Pan fry on both sides till cooked.

Peanut Chicken soup -
1 piece antibiotic free chicken carcass
1 organic carrot (cut into chunk)
1 honey date
1 cup organic raw peanut (presoaked for 24 hours)
1/2 organic green zucchini

(1) Blanch chicken carcass in boiling water for 5-10 minutes. Remove from boiling water and drain over a sieve.

(2) Heat up some water in slow cooker pot. Add in peanut and chicken carcass. Let it cook for 4 hours.

(3) After 4 hours, add in carrot and zucchini and let it cook for another 2 hours.
