Pop corn granola bars
























Recipe:
Pop corn
Pop 1/2 cup dried corn kernels with 2Tbsp vco in a big deep stove pot. Cover while letting it to pop. Pop corns are ready once there is no more popping sounds. Let stand to cool in room temperature.

Pop corn granola bars

(A)
4 fresh figs (chopped and soaked in water)
1 green apple (chopped)
a handful of raisins (soaked in water)

(B)
1 tsp chia seeds + 2 Tbsp water (soaked together)

(C)
1 tsp agave nectar (more sugar syrup will make the granola bars more sticky and well binded)

(1) Blend ingredients A with some water till it reaches a smooth texture

(2) In a sauce pan, bring some water to boil. Add in ingredients A and boil till the ingredients thicken. Put on the lid and bring to simmer in low temperature - around 120 degree celcius. Add in C and continue to simmer. Once it looks sticky - remove from heat.

(3) Add the soaked chia seeds into the mixture and mix well. (add after mixture removed from heat)

(4) In a shallow, square baking pan - crushed some pop corn, press and gather to one side of the pan. Press till the corns look flat and neat. Drizzle the hot mixture onto the corns - press and shape till the mixture and corns feel binded.

(5) Once cooled down, chilled for few hours or till it harden before cut.

(6) Keep in fridge and serve cold.

Results: The granola bars can easily fall apart if not chilled properly before cut due to low sugar syrup recipe.

Alternative to sugar syrup will be using honey.
