Chicken parmigiana
Recipe:
Chicken
2 chicken drumstick (precooked in boiled water, drained)
1 tsp shredded cheddar cheese
1 egg (beaten)
dash of mix herbs
1 cup homemade breadcrumbs (chilled)
Sauce:
2 cloves garlic (minced)
1 red onion (finely chopped)
1 Tbsp unsalted butter
2 large riped tomatoes (finely cut)
handful of fresh basil (torn)
2 Tbsp homemade tomato sauce
handful of mozzarella cheese (shredded)
handful of parmesan cheese (shredded)
(1) Precooked chicken till 80% cooked and drain under cold water.
(2) Mix cheese, herbs and egg together, stir well. Dip the chicken drumstick into the egg mixture and coat properly. Immediately roll around breadcrumbs on a flat plate, and put to a heated pan with oil and pan fry till all cooked. Set aside.
(3) To prepare the sauce. Heat up some oil with butter on a frying pan. Stir fry garlic, onion, tomatoes till fragrant and juice release. Add some homemade tomato sauce and put on the lid - simmer in low temperature.
(4) Once the sauce thicken, add in fresh basil and simmer for another 5 minutes.
(5) To serve, pour the sauce over the chicken and top with parmesan and mozzarella cheese. Wait till the cheese melted and serve immediately.
Servings: 2 adults portion
