Baked lean pork with salsa and sweet potato wedges
Recipe:
Salsa -
1/2 avocado (diced)
1 small organic tomato (diced)
2 slices organic green zucchini (finely diced)
2 organic lettuce leaves (chopped)
1 Tbsp lemon juice
1 Tbsp extra virgin olive oil
Mix all in a bowl and chill till to serve.
Baked lean pork -
5 small pieces free-range lean pork (marinated with lemon juice)
1 Tbsp chopped fresh thyme
1 tsp olive oil
(1) Rub pork with olive oil and fresh thyme.
(2) Bake at preheated oven at 170c for 20-30 minutes. Serve with salsa.
Baked sweet potato wedges -
1 sweet potato (sliced into wedges shape)
1 Tbsp olive oil
(1) Rub potato with some olive oil
(2) Bake at preheated oven at 170c for 30 minutes. Add dash of nutritional yeast for extra taste.
Remarks: It has been a while since i last did salsa to the little one. She was slightly reserved before eventually munched her way through. For the lean pork, it was slightly hard for her to chew thus i needed to cut into smaller slices. I served with hard boiled egg, which wasnt her favourite style of egg preparation and it was the same, she didnt like ! It could be better with omelette or scrambled style for her but i thought the simple hard boiled egg would goes well with the rich pork salsa.
