Banana with milk kefir grain and raisin



Ingredients:
2 bananas (sliced)
2 Tbsp milk kefir grain
2 Tbsp organic mix raisins


Mix all ingredients in a bowl and serve accordingly.


Tomato coconut rice with steamed fish

































Recipe:

Tomato coconut rice -
2/3 cup pearl rice
1/2 cup filtered water
5 Tbsp diced carrot
1/2 tomato
1 slice ginger
1 shallot (halved)
1 Tbsp vco

Add on : some chopped nai bai vegetables

(1) Put all ingredients into rice cooker and put to normal cooking mode.

(2) Once done, add in green vegetables and close the lid for few minutes or till the vegetables soft.

(3) Remove ginger slice, mix well and serve accordingly.


Steamed threadfin fish with ginger and tomato -
1 whole threadfin fish
plenty of ginger slices (cut into strips)
1/2 tomato (sliced)
1 tsp sesame oil

Add on : handful of fresh parsley

(1) Marinate fish with sesame oil for 15 minutes.

(2) Add in ginger strips and tomato and steam in preheated steamer, under high heat for 15 minutes. Leave the lid closed for 5 minutes.

(3) Top with fresh parsley and serve with rice.

Baked banana egg pancake



















I was suppose to pan fry the batter but after i had an idea why not try baking it instead for a mess free preparation. The result was awesome, the texture is like bread pudding. I added some dried cranberries for extra taste.

Recipe:
2 large bananas
3 kampung egg
1-2 Tbsp dried cranberries

(1) In a bowl, roughly mash banana and mix and beat with eggs.

(2) Scope 3 Tbsp into a medium size cupcake holder with paper liner. Add some dried cranberries on top.

(3) Bake in preheated oven for 20-30 minutes, or till the top look slightly brown and set.

Black soy millet milk




Recipe (using Philips soy milk maker):
1/2 cup organic black soy bean (soak overnight)
1/8 cup organic millet (soak overnight)
4 cup filtered water

(1) Put all ingredients into milk maker and set to soya milk mode, and let it cook till done.

(2) Filter the milk using a coffee filter and serve accordingly.


I have done without adding millet and it tasted equally delicious:
1/2 cup organic black soy bean (soak overnight)
4 cup filtered water




Tomato chicken rice in rice cooker




















Recipe:
1 tomato
1 part chicken
1 pandan leave
2 slices old ginger
4-5 Tbsp finely cut old ginger
1 organic lemon grass
1 Tbsp sesame oil

Additional : some nai bai vegetables

(1) Marinate chicken with ginger and sesame oil for 1 hour

(2) Put all ingredients on rice (ratio of rice and water 1:1) and let it cook on normal mode.

(3) Once done, add in vegetables and let it bakes till slightly soft but still crunchy. Once done, mix well, dish out and serve immediately.

Mee Suah in watercress chicken soup



















Recipe for soup:
1 bunch watercress (cut into 2 inches length)
1 piece free range chicken carcass
5 red dates (pitted)
5 dried longan
1 honey date

(1) Heat up some water in a double-boiler ceramic pot.

(2) Add in all the ingredients and cook for 2-3 hours or till ingredients soft and soup is tasty.

(3) Set aside some soup as mee suah soup base.


Preparation for mee suah:
1 portion organic mee suah
2 shallots (halved)
2 cloves garlic (diced)
1 Tbsp vco

(1) Heat up some water using a sauce pan.

(2) Add in shallots and garlic and let it cook till soft.

(3) Add in vco and mee suah and cook for 1-2 minutes or till mee suah soft but not overcooked.

(4) Pour onto watercress soup base and serve accordingly. (We had it with baked black pomfret)


Steamed Egg







































I recently did a variety of steamed eggs for the 18mth old + little one. Surprisingly, most of the time were actually made as her breakfast. Soft steamed egg is warmth and superb as breakfast, it can be so versatile. The most important is that the little one likes it.

(1) Basic steamed egg :
1 kampung egg
1 tsp vco
1.5 Tbsp soup base (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(2) Steamed egg with vegetable and pear
1 kampung egg
1 Tbsp diced pear
2 Tbsp finely chopped nai bak
1.5 Tbsp homemade milk (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

1.5 Tbsp homemade milk (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(4) Steamed egg with mushroom, vegetables and cream cheese
1 kampung egg
1 Tbsp chopped shitake mushroom
1 Tbsp finely chopped nai bak
1 tsp cream cheese (stir and mix well)
1.5 Tbsp filtered water (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

(5) Steamed egg with vegetable
1 kampung egg
1 tsp vco
2-3 Tbsp finely chopped nai bak
1.5 Tbsp filtered water (i used egg shell to measure ratio 1:1.5)

Steam in preheated steamer for 5-10 minutes.

Miso fried rice




[23.03.2015]
Recipe:
1/2 cup pearl rice (steamed, cooled at room temperature)
some chopped carrots
some chopped egg plants
some chopped french beans
2 free-range eggs (beaten and mix in 1 tsp sesame oil)
2 Tbsp shredded old ginger
2 cloves garlic (minced)
2 Tbsp organic miso paste (diluted with 5 Tbsp of water)

(1) Heat up some vco on a cooking pan. Saute garlic and ginger till fragrant and brown.

(2) Add in carrot and stir fry. Add in egg plant and stir fry. Add in french bean and stir fry. Add some miso paste and mix well.

(3) Once the ingredients slightly softer, scrape the ingredients to the side and pour in beaten egg from the middle. Once the egg looks half cooked, pour in cooked rice and mix well.

(3) Stir fry for a while, lower the heat and stir fry, add in miso paste a little at a time. Once done, dish out and serve immediately.

Dishes -
Double-boiled chinese chicken soup
Stir fry lettuce with garlic

Recipe:
Double-boiled chinese chicken soup -
some chicken parts - i used about 5-6 pieces (blanched for 5-10 minutes)
5 dried longan
10 red dates (pitted)
1/2 cup yu chuk (solomon slices)
2 Tbsp wolfberries
1 Tbsp (to add before serve)
4-5 cup water














(1) Put dried ingredients at the bottom. Cover with ceramic plate, and put the chicken parts on top.
(This is to separate chicken from dried ingredients)

(2) Add about 4-5 cup water and let it slow-cooked for 2 hours or till the chicken is soft, and soup is fragrant.

(3) Add 1 Tbsp wolfberries before serve.

Baked threadfin fish with cheese and breadcrumb -
1 whole threadfin fish
some lemon juice
2 Tbsp shredded mozarella cheese
2 Tbsp breadcrumbs
handful of chopped fresh parsley













(1) Marinate fish with lemon juice for 15 minutes.

(2) Add cheese and breadcrumbs on top. Bake in preheated oven at 180c for 25-30 minutes.

(3) Add freshly chopped parsley and serve accordingly.

Porridge in rice cooker















Ingredients:

1/2 cup pearl rice
3 cup soup base
4 dried oyster (presoaked)
1/2 carrot (thinly sliced)
1 orange sweet potato (diced)
5 whole organic lady fingers
1/2 yellow onion (halved)

Put everything into rice cooker pot, and set to porridge mode to cook for 1 hour.

Remarks: I had the luxury to buy free range salted duck egg from Opika organic shop, 1 Utama. It was my first try, i bought only 1 and it cost RM2 :)

Basic coconut cookies





Recipe (Made 14 cookies):
1/3 cup coconut flour
1/2 tsp baking powder
5 knobs unsalted butter
4 free range eggs

(1) Mix butter with egg using a fork.

(2) Separately, mix flour with baking powder. Scope 1 Tbsp at one time into butter egg mixture and slowly mix in all till a soft dough is formed.

(3) Shape it and baked in preheated oven at 200c for 10 minutes.

Ingredients:
Blueberries
Watermelon

Sunflower seeds
Almond flakes
Natural Yogurt

Classic aglio olio spaghetti (variation)
















Recipe (made 1 adult serving):
1 portion gluten-free spaghetti + 1 tsp olive oil
1 bunch fresh parsley (finely chopped)
5 cloves garlic (thinly sliced)
1 tsp cayenne pepper
1 Tbsp olive oil
2 Tbsp extra virgin olive oil

To serve, add -
1 tsp chilli flake
1 tsp shredded cheddar cheese

(1) Using a deep cooking pan, heat up some water till boiling. Add olive oil and put in pasta, cook till it is almost soft but still spongy. Immediately, drain over cold water and set aside.

(2) Using a frying pan, heat up olive oil and stir fry garlic till crispy. Once done, dish out and set aside.

(3) To prepare the aglio olio spaghetti, add extra virgin olive oil to the cooked spaghetti. Subsequently, mix in fresh parsley and cayenne pepper. Add in garlic slices, chilli flake and cheddar cheese and serve immediately.



I have done another variation using the stir-frying method (as i have extra cooked spaghetti kept in fridge).
















Recipe (made 1 adult serving):
1 portion cooked gluten-free spaghetti
1 cup finely chopped parsley
3-5 cloves garlic (sliced)
1/2 tsp cayenne pepper
1 Tbsp olive oil
1 Tbsp extra virgin olive oil
1 tsp shredded grass-fed cheddar cheese

(1) Using a frying pan, heat up olive oil and stir fry garlic till crispy.

(2) Add in spaghetti and stir fry shortly. (note: over-cooked will turn mushy)

(3) Once done, stir in cheese and mix well. Toss in chopped parsley and cayenne pepper and serve immediately.

Coconut cinnamon pancake (simplified version)





























Ingredients (made 6 mini pancakes):
2 egg whites
1/4 cup organic coconut flour
1 tsp ground cinnamon
1 tsp baking powder
1/2 cup fresh coconut milk


Fried rice with roasted thyme chicken














Recipe:

Roasted thyme chicken -
1 big piece antibiotic free chicken breast (sliced)
1 tsp dried thyme flake
1 Tbsp lemon juice
1 tsp organic corn flour

(1) Marinate whole chicken breast with lemon juice, flour and thyme for 1 hour.

(2) Bake in preheated oven at 180c for 20-25 minutes. Once done, dish out and let stand to cool slightly.

(3) Take few slices and diced into small pieces to prepare fried rice. Keep the balance to serve with the fried rice.

Spinach cinnamon fried rice -

Step 1 : To prepare cinnamon rice

(1) Put 1 cup of white rice with 1.5 filtered water (diluted with 1 tsp ground cinnamon) in rice cooker pot.

(2) Set to normal cooking mode and let it cook till done. Once done, let it cool at room temperature before use.

Step 2 : To prepare fried rice -
Cooked rice from Step 1
2 cup purple spinach leaves (chopped)
1 cloves garlic (minced)
1 shallot (sliced)
1 Tbsp anchovies (presoaked, rinsed)
1/2 cup diced roasted thyme chicken prepared as above

(1) Heat up some vco on a cooking pan. Saute garlic and shallot till fragrant. Add in anchovies and stir fry till crispy.

(2) Add in spinach and stir fry shortly.

(3) Pour in rice and mix well.

(4) Add in diced chicken and stir fry shortly. Once done, dish out onto a serving plate and top with the balance of thyme chicken prepared. Add some shredded cheddar cheese for extra flavour.






Basil mushroom baked sweet potato






Recipe:
2 medium size orange sweet potato (cut into pieces and presteamed till soft)
1 free range egg (lightly beaten)
3 dried shitake mushroom (cut small)
2/3 cup basil leaves (chopped small)
3-4 organic lady fingers (finely cut)
1 Tbsp mozarella cheese

(1) Mix all ingredients in a bowl except potatoes. (It should look thick and sticky)

(2) Spread the ingredients on top of the sweet potato slices. Baked in preheated oven at 170c for 15-20 minutes.

(3) Serve with organic dijon mustard spread (optional)
