Spices mutton tomato rice with eggs in rice cooker
Recipe:
1 1/2 cup rice (ratio of rice:water = 1:0.8)
Mutton, lean part (sliced, marinated with lemon juice, dried basil and sesame oil)
1 kampung egg for lo
2 normal eggs for papa and mama
3 cloves garlic (minced)
5 shallots (sliced)
5-6 stalk french beans (cut into 2 inches)
1/2 white potato (cubed small)
4-5 thick slices yellow zucchini (cubed small)
1/2 carrot (cubed small)
1 stalk celery (diagonally cut)
5 honey cherry tomatoes (halved)
1 big red tomato
1 bowl homemade tomato paste / sauce
Spices for stir-fry
Aniseeds
Fenugreek seeds
Cardamom
Anise Star
Cinnamon stick
(1) Heat up some grapeseed oil, stir-fry garlic and shallots till fragrant. Add in all dry spices or dried herbs and stir-fry for a little while.
(2) Add in mutton and stir-fry till cooked.
(3) Stir-fry (quick sauteed) all vegetables (from hardest to softest) except rice, big red tomato and celery. Add in homemade tomato paste and stir-fry all well.
(4) Off fire and pour the cooked ingredients into rice cooker to cook with rice, big red tomato and celery (refer picture). Add in uncooked eggs on top and cook together.
(5) Once done, remove eggs from rice cooker. Peel off the shells and put back into rice cooker. Separately, stir and mix all ingredients and rice properly. Mash the big red tomato all together and mix well. Serve immediately.
Yields: 3 adults portion
