Easy spinach fried rice
Recipe:
1/2 cup pearl rice (cooked and cooled)
1.5 cup chopped organic spinach
1/2 celery (diced)
2 cloves garlic (minced)
2 shallots (thinly sliced)
2 kampung egg (beaten, add 1 tsp sesame oil and dash of organic pepper powder)
(1) Heat up some vco on a cooking pan. Saute garlic and shallot till fragrant.
(2) Add celery and stir fry shortly. Add spinach and saute shortly.
(3) Put ingredients to one side and pour in beaten egg. Once is half cooked, pour in rice onto the egg. Flip the egg with the rice and stir fry with the other ingredients.
(4) Once all ingredients soften (not overcooked), dish out and serve immediately.
Homemade Bread with avocado spread
Recipe:
1 1/2 cup strawberry water (i mashed 7 strawberries and filled with filtered water)
2 Tbsp vco
1 tsp organic raw honey
1 cup organic unbleached all purpose flour
1 cup organic mix grain flour
1 cup wholemeal flour
1.5 tsp active dried yeast
In a breadmaker, put the ingredients as according to the list above.
Mode: Wholemeal
Crust: Light
Weight: 1.5lb or 700g setting
Bread machine: Tesco breadmaker

The 21mth old toddler had it with avocado spread, basically just some mashed avocado and spread onto the bread, with organic sugar free soy milk. We do the avocado spread very often, it is nutritious and such a quick effort to make.

Lunch dishes -
(1) Steamed orange sweet potato - 30 minutes
(2) Pan fried small mackerel with ginger and red bell pepper
(3) Steamed organic french bean - 5 minutes
(4) Stir-fry jicama with carrot and shitake mushroom
Recipe :
Pan fried mackerel -
1 small mackerel (marinated with 1Tbsp lemon juice)
2 knob ginger (cut into strip)
1/4 organic red bell pepper (cut into strip)
1 Tbsp organic corn flour
(1) Heat up some vco on a frying pan. Saute ginger strip till brown and crispy. Add in red bell pepper and stir fry shortly. Dish out and set aside.
(2) Using back the same frying pan. Heat up some oil. Coat the fish with some corn flour and pan fry on both sides till cooked.
(3) Top with ginger and red bell pepper, serve immediately.
Stir-fry jicama with carrot and shitake mushroom -
1 cup shredded jicama
1/2 cup shredded carrot
2 dried shitake mushroom (presoaked)
1 clove garlic (minced)
(1) Heat up some oil on a cooking pan. Saute garlic till fragrant.
(2) Add in mushroom and saute.
(3) Add in carrot and saute.
(4) Add in jicama and saute. Once done, dish out and serve immediately.
Dinner Dishes
Dinner Dishes -
(1) Baked black pomfret
(2) Steamed okra - 5-8 minutes (depends on preferred softness)
(3) Corn tomato celery soup
Recipe:
Baked black pomfret -
For the marinade, combine the followings ;
1 tsp organic turmeric powder
1 tsp organic garam masala
2 tsp organic apple cider vinegar
1 knob grated ginger
7-8 cloves grated garlic
dash of cayenne pepper
Mix all ingredients into a paste and set aside.
To prepare the fish for baking.
(1) Thaw the fish and pat dry. Make 2-3 slits on both sides of the fish.
(2) Marinate the fish using the paste prepared earlier for 30 minutes.
(3) On a baking dish, lay 3-4 bamboo leaves and spray with some vco. Lay the marinated fish on top
and bake for 40 minutes at 175c.
(4) Once done, dish out carefully and squeeze some key lime onto the fish and serve once is slightly cool in room temperature.
Corn tomato soup -
1 large organic corn (halved)
1 large organic tomato (quartered)
2 organic celery (chopped)
3 cloves garlic (with skin intact)
1 yellow onion (quartered)
1 Tbsp vco
(1) Put all ingredients into rice cooker pot with sufficient water. Set to soup mode and let it cook for 1.5 hours.

Quick stew pumpkin chicken
Recipe
1 knob ginger (sliced)
5 cloves ginger (minced)
12 cup cooked organic chickpeas
1 cup chicken cube (i used sakura chicken chop part, marinated with dash of black pepper)
1 cup pumpkin cut into chunk
1 tsp organic fermented soya bean paste (diluted with 1/2 cup filtered cup water)
2 Tbsp chopped fresh coriander (for garnishing)
(1) Heat up some vco on a cooking pan. Saute ginger till brown and fragrant. Add in garlic and saute till fragrant.
(2) Add in chicken and saute till cooked.
(3) Add in pumpkin and stir fry shortly. Pour in diluted soya bean paste all and around.
(4) Lower temperature, add in cooked chickpeas, put on a lid and stew for 15 minutes. Once done, garnish with coriander and serve immediately.
Verdict: This is a very appetizing, sweet and savoury dish. Worth trying ! We had it along stir fry okra with red bell pepper slices.

Cherries pancake
This is a must try delicious pancake, without using sugar. It is a grain-free recipe.
Recipe:
5 cherries (chopped small)
2 bananas (mashed)
2 kampung eggs (beaten)
2 Tbsp almond meal
1 Tbsp organic coconut flour
Serve along: Plain yogurt with cherries, 5 grain milk
(1) Mix all ingredients in a mixing bowl.
(2) Heat up some vco on a frying pan. Drop 1 Tbsp and pan fry till both sides are brown or cooked. (Flip carefully)
(3) Once done, remove from heat and serve shortly after.

Watercress papaya carrot soup
Pan fried mackerel -
(1) Marinate fishes with turmeric, garam masala and 1 Tbsp lemon juice for 15 minutes.
(2) Coat with some organic corn flour and pan fry on both side till brown and crispy.
Stir fried french bean with egg -
(1) Heat up some vco on a frying pan. Saute minced garlic till fragrant.
(2) Add in french bean and cook shortly. Beat in an egg and wait till it is half cooked before turn over and scramble it. Stir fry with french bean and mix well. Once done, remove from heat.
Watercress papaya carrot soup -
1 bunch chopped watercress
1 unripe papaya (cut into chunk)
1 whole carrot (cut into chunk)
2 slices natural dried huai san
2 slices solomon seal
5 red dates (pitted)
(1) Put all ingredients into rice cooker pot. Add sufficient water and set to 'soup' mode. Let it cook for 1.5 hours or till all ingredients soft.
Steamed orange with salt
I have read and heard about this remedy many times but have not tried it personally. I initially started with only steamed orange without salt (with the intention to make my baby likes orange, as she dislike the fresh one), and later a little bit of salt when i feel us at home having dry throat or the weather is hot and humid.
Recipe:
1 orange (I used Sunkist)
1 tsp himalaya pink salt (optional, good to add if having dry throat)
(1) Cut the orange into half (with skin intact), sprinkle some salt onto both sides equally and steam for 10 minutes.
(2) Once done, let it cool slightly before peeling off the skin. Cut into smaller pieces for baby easy consumption.
Tips - After steaming, there would be juice residue which is extremely salty. It is nice to remove and dilute it with some water and drink it instead. For adult, it is perfectly fine to eat once done steaming but for baby, it is safer to cut into smaller pieces before serving. Additionally, the steaming without salt is really a good way to introduce baby eating orange.

When i feel tired or in a rush, i always think of maximizing tasks with minimal time. Thus, this is one of the quickest ways preparing delicious pasta for our lunch.

1/4 organic red bell pepper (chopped small)
1/2 cup chopped organic cucumber
1/2 yellow onion (chopped small)
1/2 carrot (cut small)
some chopped parsley (for garnishing)
Note: The cutting sizes should roughly match with the steaming time require to achieve the same softness for each ingredient.
(1) Put all ingredients in a bowl and steam till all ingredients soft. Around 20 minutes. Once done, mash using a fork, add in some chopped parsley and set aside.
(2) Using a saucepan, bring some water to boil. Add 1 tsp of olive oil and add in 1/2 cup pasta and boil till al dente.

Raisin and Oat bread
Ingredients (in sequence):
1 cup warm water
2/3 cup mixture of 1 egg, milk kefir and natural greek yogurt
2 Tbsp coconut oil
1 cup wholemeal flour
2 cup bread flour
1 tsp molasses sugar
1 tsp active instant yeast
After the first beep, i added raisins to mix with the dough.
Right before it started baking, i sprinkled rolled oat and wheat germ generously on top for extra fibre.
Bread machine: Tesco Breadmaker
Crust: Light
Size: 1.5lb
Mee Suah in Watercress Papaya Soup
Recipe for Soup:
1 bunch fresh watercress (presoaked)
2 cup unripe papaya including skin (deseed and cut into chunk)
5 natural red dates (pitted)
2 cloves garlic including skin
1 piece old ginger
2 free range chicken drumstick
(1) Fill up sufficient water in a rice cooker pot, put in all the ingredients and set to soup mode. Let it cook for 1.5 hours.
(2) Once done, scope a portion aside. Transfer onto induction / cooker. Set to low temperature, beat in an egg and add in mee suah.
(3) Once mee suah soften, serve immediately.
Mixed fruits salad breakfast
Ingredients:
golden kiwi
grapes
orange
apple
romaine lettuce
some lemon juice
Mix all ingredients in a bowl and serve immediately.
