Recipe (adapted from Elanaspantry)
1/2 cup almond meal
2 Tbsp organic coconut flour
1/2 tsp natural baking soda
3 medjool dates (pitted)
3 free-range eggs
1 Tbsp organic apple cider vinegar
1/2 cup walnuts (roughly chopped)
(1) Using a food processor, pulse eggs , apple cider vinegar and dates.
(2) Remove from processor, and mix in almond meal and coconut flour. Mix well using a spatula or large spoon.
(3) Add in walnuts and mix well.
(3) Bake at 170c for 30 minutes. Cool the bread for 1 hour before slicing.

I have done this two more times since then, and did some changes to see how it goes -
For the second tried, i actually mix walnut with cashew nut, and reduced the dates to two. I also fully hand mix without using food processor. The texture outcome was the same. The cashew nuts gave a milder taste compared with walnut and i think walnut gave a more tasty outcome too. Other than that, it is really a good to keep recipe.
This is the third tried, and i called it almond cake instead. In fact, it looks and tastes more like cake than bread to me from the beginning -
Recipe:

3 free-range eggs (beaten)
1 Tbsp organic apple cider vinegar
1/2 cup walnuts (roughly chopped)
1/8 cup finely diced almond
some finely diced almond for topping
(2) Mix in almond meal and coconut flour. Mix well using a spatula or large spoon.
(3) Add in walnuts, diced almond and mix well. Top with some diced almond.
(3) Bake at 170c for 30 minutes. Cool the bread for 1 hour before slicing.
Verdict: I didnt toast the nuts and i think it would be nicer and more crunchy to have the nuts toasted before baking.
