Dinner Dishes
Recipe:
(a) Huai San Soup -
1 whole huai san (cut into bite size)
1 whole medium size carrot (cut into bite size)
12 lotus seeds
10 red dates
1 free range chicken drumstick (blanched for 5 minutes)
estimated amount of sufficient water.
Bring some water in slow cooker pot and heat it up. Once is hot - around 15 minutes, add in all the ingredients and let it slow cook for several hours or till soup is tasty.
(b) Stir-fry chayote shoots
1 bunch chayote shoots
4 cloves garlic (minced)
Heat up some vco on a cooking pan and saute garlic till fragrant. Add in chayote shoots, stalks first then leaves and cook till soft.
Note: Stalks that are too hard are not edible as these are difficult to chew.
(c) Stir-fry beef with onion
1 red onion (sliced)
1 piece lean beef (marinated with 2 tsp garam masala, 1 tsp curry powder, 1 tsp turmeric powder)
- marinated for 15 minutes
2 cloves garlic (minced)
2 sorrel leaves
1 Tbsp fennel seeds
(1) Saute garlic and onion till fragrant.
(2) Add in fennel seeds and stir fry.
(3) Add in beef and stir fry till 80% cook. Add in sorrel leaves and stir well. Dish out and serve immediately.
(d) Steamed white pomfret with ginger and lemon thyme
1 whole white pomfret (marinated with 1 tsp apple cider vinegar for 15 minutes)
handful of fresh lemon thyme
1 knob ginger
Put all ingredients on a plate and steam under high heat for 10 minutes and lower heat for 5 minutes.
Persimmon and golden kiwi with homemade peanut butter spread, boiled chickpeas
Recipe:
1/2 large persimmon
1/2 golden kiwi
1/2 cup boiled chickpeas (boiled for several hours in medium high heat)
few Tbsp of homemade peanut butter (refer recipe under title Nuts)
I learnt from jewelpie.com that adding some peanut butter to your fruits could add some healthy fat and make you fuller. Thus this is good as breakfast too i suppose !
I decided to share this simple meal after received quite a response in Healthy Food For My Baby forum and these are some of the summary i gathered along (after done some reading too) :
-Persimmons are cooling food
-Fresh persimmon shouldnt be consumed if having cough, however there is dry persimmon which could be used to boil into soup as cough remedy.
-Persimmon is not under top 12 dirty dozen, thus can buy non organic. Non organic persimmon may be expensive too. I bought only one (in picture) that cost RM5.90, i consider it costly.
Stew sardine with potatoes and vegetables
Recipe:
2 fresh sardine (marinated with lemon juice for 15 minutes)
3 cloves garlic (minced)
1/2 red onion (sliced)
1 organic potato (thinly cut in whole)
1/4 organic carrot (thinly cut and quartered)
1/2 cucumber (chopped small)
handful of organic broccoli
handful of chopped organic spinach
1 bowl homemade vegetables smoothie
3/4 cup homemade nut milk
(note: you can replace the vegetables smoothie and nut milk - with liquid (soup stock etc) of your choice)
(1) Heat up some oil on a cooking pan. Saute garlic and onion till fragrant.
(2) Add in potato and then carrot and stir fry till almost soft.
(3) Add in sardine and pan fry till cooked.
(4) Add in 1/2 the amount of vegetable smoothie and nut milk and saute.
(5) Add in all vegetables except cucumber and put to simmer till vegetables almost soft (do not overcooked).
(6) Once done, add in the remaining vegetable smoothie and nut milk and mix well to make it more moisture. Add in cucumber and roughly fry - around 2 minutes. Dish out and serve immediately.
Pear Salad
Recipe:
1 pink pear (cubed)
1 whole small cucumber (chopped small)
4 pieces lettuce skin (chopped small)
handful of blueberries
1 Tbsp extra virgin olive oil
This is a big plate of pear salad for us. It is very refreshing to start the morning with these. Both me and lo like the combination very much. I forgot to take the pear picture before cut, which i should as it is very tasty. It is a pink red colour pear. I bought one to try and it is really soft. The texture is almost like packham but it is softer. It is also sweeter !
For the lettuce, i learnt that there are many types of lettuce in the market. However, this suits my lo the best i find. It is almost similar like chinese "buo li sheng chai", which i have been looking around for the freshest ones. This is good because it doesnt taste too raw, and it is a good start if want to introduce raw veggie to baby. I bought organic and the outlook is like lettuce-head, in twin packaging.
Chicken rice in rice cooker (variation)

Recipe:
3 chicken drumstick
1 lemon grass
1 big slice old ginger (minced)
5 cloves garlic (minced)
2 pandan leaves (tied)
1/2 red onion (halved)
1.5 cup rice
2 cup homemade milk (water / liquid of your choice)
(1) Blanch chicken drumstick for 5 minutes. Marinate with 1 Tbsp sesame oil, garlic and ginger for 15 minutes.
(2) Put rice in rice cooker pot. Add in milk and the rest of the ingredients.
(3) Put to cooking mode. Once done, remove lemon grass and pandan leaves. Set chicken drumstick aside, stir and mix the rice well.
Stir-fry Kale
(1) Chop kale leaves into smaller bite size pieces - about 2 inches length.
(2) Heat up some vco on a cooking pan. Add in garlic and saute till fragrant.
(3) Toss in kale leaves and fry till 70% cooked - around 5 minutes. Dish out and serve with chicken rice.
Dwaft gourd soup
Put some water in slow cooker pot. Add in chopped gourd and 1 honey date. 5 minutes before consuming, add some goji berries. Serve immediately.
Stir-fry yam and pumpkin with broccoli, kailan and egg

Recipe:
1 bowl yam (cubed)
1/2 bowl pumpkin (cubed)
2 clove garlic
2 shallot
1 bowl of broccoli and kailan (chopped small)
1 cup homemade soup stock
(1) Heat up some oil on a frying pan, saute garlic and shallot till fragrant.
(2) Add in yam and pumpkin and cook till soft. Add some soup stock if needed.
(3) Add in vegetables and the balance of soup stock and simmer till vegetables soft but still crunchy. (do not overcook the vegetables). Once done, serve immediately.
Steamed pumpkin egg

Recipe:
1 kampung egg (lightly beaten)
1.5 Tbsp homemade milk (you can use any preferred milk. I used mixed grain milk)
few slices thinly cut pumpkin
Steamed on high heat for 5 minutes and low heat for 5 minutes.
