Dinner : Stir Fried Butter Prawn and Pandan Asam Chicken Drummets

Today, i managed to cook up a soup and 3 gourmet dishes for our dinner. I am sharing two dishes recipe which we were done eating within minutes! Enjoy !


















Stir Fried Butter Prawn
10 tiger prawns (pre froze with raw cane sugar)
3 Tbsp unsalted grass fed butter
1/4 large onion (julienne)
3 cloves garlic (minced)
1. Marinate prawns with salt and pepper for 10 minutes. (after defroze)
2. Heat up 1 Tbsp butter and stir fry prawns. Add the remaining butter and cover up the frying pan using a lid.
3. After 3 minutes, remove lid and flip the prawn or stir fry around a little.
4. Dish out and put aside.
5. Using a clean frying pan, heat up some coconut oil. Add in onion and dry till slightly brown, add in garlic and stir fry till crispy.
6. Dish out and put on the cooked prawn.





















Pandan Asam Chicken Drummets
Around 8 chicken drummets
Around 20 pieces pandan leaves and 8 bamboo toothpicks
Asam paste marinade sauce
Some raw honey
1. Marinate Drummets with honey and asam paste for 30 minutes.
2. Wrap the Drummets with pandan leaves, carefully and tightly. Seal using toothpicks.
3. Bake at preheated oven with fan at 180c for 30 minutes, flip and continue to bake for 10 minutes.

[Non-Halal] Pork with Lotus root, carrot and red dates soup.

On the 12th July 2018, i cooked this quick and easy to prepare soup. My liking has always been the fuss free and straightforward, easy to do method, follow the recipe if you are same too ! I promise a simple delicious soup 😊

Ingredients -
300gm or 1.5cup free range pork ribs (chop small)
1 large organic lotus root (thinly sliced)
1 medium size carrot (cut in triangle pieces)
1 dried scallop (presoaked and soften)
8 red dates (remove seeds)
6 to 8 cups filtered water
Handful of gojiberries

Method -
Put all the ingredient into rice cooker and boil for 2 to 3 hours. Serve accordingly.









Apple Slices with Cashew Nut Butter

Wollaa~! Is a failed proof no-recipe meal, apple slices top with cashew nut butter as quick snack. Try it ! It is able to fill a tiny stomach, cashew nut butter is a nut free spread - great for kids with nut allergic.

Chicken with carrot wrap




















Inspired by Top 10 Kid-Friendly Wrap , i decided to make wrap for my kids breakfast, i thought it would be easy. I found that, to wrap the ingredients nicely is an acquired skill@! I am determine to learn as i make more because it is a fun eating experience for me and the kids. My children love to participate in tossing in the ingredients too.

From the link, there are tonnes of variety that could refer to, i choose the chicken wrap for a start. I also cook the carrot slightly as my daughter told me she prefers it cooked than raw. My next 'wrap' project would probably be one that using avocado, but that would be after i replenish avocado in my kitchen. Lets move on to the chicken wrap recipe.

Ingredients -
1 cup antibiotic and hormone free chicken fillet (cut small)
1 small size carrot (cut into thin slices or texture that your kids like)
some natural cheese (shredded)
some cream cheese (soften)
2 rye wraps (shown in picture below)

Method -
FOR THE FILLING
1. Marinade chicken pieces with some sea salt, thyme and pepper. Leave for 10 minutes.


2. Stir fry chicken till cook. Put aside.
3. Stir fry carrot till it is slightly soften. Dish aside.

TO PREPARE THE WRAP
1. Lay 1 wrap across a flat working top.
2. Spread some cream cheese. (note not too much as it would be heavy and the wrap will tear)

3. In sequence, put chicken, carrot and top with cheese.
 

4. Start to roll from one end, hold firmly while rolling till all the ingredients are fully covered
and it is intact. Cut and divide into half using a sharp knife.
5. Serve immediately or chill to keep fresh before consuming.

RYE WRAP (which could be easily get from Village Grocer, Malaysia)








Organic Banana Muffin with oat topping

I have made many versions of banana muffins. For this one, i tried without oil - it is slightly dry. But it goes very well when eat with cream cheese. Since i am running out of cinnamon powder, i only use nutmeg powder and the outcome still good.

Ingredients -
2 medium size banana (mashed)
1 kampung egg
1 tsp organic vanilla extract
1/8cup filtered water + 2tsp organic chia seed (mix for 5 minutes)
3/4 cup organic self raising flour
1tsp nutmeg powder
Some rolled oat for sprinkle

Method -
1. Mash banana. Add in egg.
2. Add in all the rest of the wet ingredients.
3. Add nutmeg powder and flour. Mix well.
4. Transfer the batter into muffin cups. Sprinkle some rolled oats on top. Press the oat slightly to make sure it sticks well to the batter (use a small spoon).
5. Bake in preheated oven at 180c for 30 minutes. Turn on the fan and increase temperature to 190c for the last 5 minutes.
6. Serve with some cream cheese.

Yield 6 medium size muffins.

Pure Organic Cocoa Pancake

Its been a while since my last post and i decided to finally spend some time to record what i prepare on daily basis once again! Just like before, i prefer to improvise simple and straightforward recipe and use ingredients that i have to prepare a dish. I do not have time for complicated or long steps cooking anymore lol!

Whilst i was suppose to make the usual banana pancake, i realised i ran out of banana as well as cinnamon powder, which i usually use when doing a quick banana pancake. I realised i only have flour and egg to be precise for the making of pancake. I took the idea of tossing in some organic carob powder which we have from the fridge.

That made a whole lot of difference !



Recipe
Eggless | Easy Recipe | Sugar Free

Ingredients -
2/3 cup organic self raising flour
1 cup filtered water + 2 tsp organic chia seed (mix together for 5 minutes and stir occasionally)
2 tsp pure organic carob powder / cocoa powder
1 Tbsp raw honey
some coconut oil for greasing

Method -
1.  Mix flour and cocoa powder in a mixing bowl.
2. Add in water chia seed mixture, mix well. You can use a small balloon whisk.
3. Add in honey and mix well.
4. Grease some oil over a cooking pan.
5. Drop 1 Tbsp batter each time and flip over once the edge started to crisp. Pan fry the other side till slightly brown and is cooked.
6. Serve warm, with fresh cucumber slices.

Yield 19 pieces mini cocoa pancakes
